Oolong

Commonly known in the West as Oolong, this unique Chinese tea is technically named wulong (乌龙, lit. “black dragon”). One of the most singular of Chinese teas, Oolong often starts life as the leaves from special tea bush cultivars, and goes through an intense process of sun-drying, oxidation/fermentation and rolling before reaching its drinkable form.
